Description :
Surface: 5000 /sq.hectares.
Age of vines: 20 years.
Grape Varieties: 85% Merlot,15% Cabernet Sauvignon.
Soil: Clay and Gravel.
Yield: 50 Hl /Ha.
Vinification:
In stainless steel tanks with thermoregulation, starting with cold prefermentation maceration followed by low temperature fermentation for 15 days.
Tasting:
Intense color and deep. Nose of red fruits toasted vanilla. Apowerful wine, round, fruity and fairly long finish.
Awards:
Médaille d’Or au Concours des vins d’Aquitaine in 2010.

Description:
AOC Haut-Médoc
Terroir: Clay and Limestone, Sandy-Gravelly and Gravel
Grape Varieties: Merlot 55%, Cabernet Sauvignon 45%
Winermaking: After a sorting of the grapes on the vine, the grapes are traditionally vinified in termo-regulated stainless steel vats.
Maturing: Blending is signed by Eric Bossienot " the oenologist of the Grands Crus" ( Chateaux Latour, Lafite, Margaux....)
Wine Tasting:Clear deep ruby in appearance, Le Comte de Saint Germain is a blending of fruity, fleshy, having a good concentration and neat parcels. This wine is both representative of its soil and very wealthy on the taste point. Clean nose with aromas of raw meat, red cherry, raspberry and redcurrant and creamy oak. Good sweet attach, creamy, plenty of flavour, refreshing. Complex and well balanced throughout. The red fruits from the nose continue onto the palate perfectly and there is a long, smooth finish.
Drinking:Serving temperature: 17/18 °C. Decanting 1 or 2 hours before serving. The wine is not treated, sediments are natural.
Food and Wine: To be appreciated with rib of beef, duck, lamb and pork grill. Cheese with favour neat pasta will be tasted with.
AOC Médoc Red Wine
Terroir: 40% Clay and Limestone, 40% Sandy-Gravelly and 20% Gravel
Grape Varieties: Merlot 50%, Cabernet Sauvignon 50%
Winermaking: Le Tertre Saint Clement respects the techniques and traditions of the Medoc. The Harvest is timed to coincide with the optimim phenological ripeness of the grapes. After the grapes are sorted and completely destemmed, fermentation takes place for approximately 10 days. Long steeping with post-alcoholic fermentation maceration follows. once the process of malolactic fermentaion in tanks is completed, this brings an end to the wine making process.
Maturing: The wine is stored in barrels of French oak for 9 months. At the end of this period the final assembly takes place under the watchful eyes of the oenologists and technicians. Once this has been completed, the wine is stored vats ready for bottling.
Wine Tasting: The colour is deeply intense. The nose is open with a good balance between the aromas of jammed black berries and the vanilla notes of the breeding in barrels. The palate is ripened, ample, round and long.
Drinking: You will appreciate this full bodies wine within 10 years. Drink it at cool room temperature, around 16°C.
Food and Wine: It will fit in perfectly with Chicken Wingsor Legs, Chili Con Carne, Grilled Beef Ribs, Ham Piquant Cream Sauce.

Description :
Density: 3300 to 5000 feet/acre.

Grape varieties: Merlot - Cabernet Sauvignon - Cabernet Franc
Soil: The vines thrive on soil primarily calcareous clay and receive strong sunshine. The conditionsidéales merged to provide a generous wine and aromatic.

Vinification :
Type of tanks: Stainless Steel thermoregulated.
Maceration: in stainless steel tanks for 4 days at 12 ° C.
Assembly: 90% Merlot - 10% Cabernet Sauvignon
Breeding: 12 to 18 months in stainless steel tanks so that the wine will soften.
Production: 120 000 bottles.

Tasting:
Deep red and clear. Intense black fruit and ripe licorice. Flexible and balanced palate with aromas of blackberry and clove.

AOC Red Bordeaux
Grape Varieties: 50% Merlot, 50% Cabernet Sauvignon
The Soil: Situated in the heart of the Entre-Deux-Mers region, on the chalky-clay hills of Gornac at the foot of the old Haut-Benauge mill which dates from the XVIth century and in which there is a little rural museum of vines and wine. CHATEAU CAZEAU comprises a vineyard of two hundred and fifty hectares among which about fifty hectares are reserved for the Cuvée Prestige.
The Estate: The estate goes back to the XVIth century and has always had a vineyard vocation. CHATEAU CAZEAU, first marketed in 1986 saw the establishment of its Cuvée Prestige in 1994.
Vinfication: The Cuvée Prestige comes from specially selected plots in the vineyard and is treated with particular care throughout the long vegetative cycle as well as a careful expert vinification.The ageing is carried out in oak casks each renewed by thirds for a period of ten months.
Tasting Notes: Fat with fine tanins and nutty notes in the end. Fine, elegant and attractive wine.
Food and Wine: will go perfectly with roasts, red meats, poultry, lamprey and flap-mushrooms prepared in the Bordeaux manner. Not to mention cheeses produced by high temperature methods and red fruit. This wine should be served between 16° to 18°C. Open the bottle one hour in advance. Can be laid down for two to three years. Age will improve it and make it become more round and mature.
AOC Red Bordeaux
Grape Varieties: 40% Merlot, 25% Cabernet Franc, 35% Cabernet Sauvignon
The Soil:In the heart of the Entre-Deux-Mers region, on the chalky-clay hillsides of Sauveterre, The DOMAINES of CAZEAU & PEREY control a vineyard of three hundred and thirty five hectares of which three hundred and five hectares under red vines, and thirty hectares under white, spread over three large plantation areas in Gornac, Soussac and Sauveterre de Guyenne, and marketed under the names of CHATEAU CROIX MERLIN. The vines average from twenty to thirty years of age.
The Property: A beautiful girondine residence from the XVIIIth century situated in Gornac, at the foot of the Haut-Benauge mill, which dates from the XVIth century and which now houses a small country museum dedicated to wine and vineyards. CHATEAU CAZEAU produces high quality red wines from noble grape varieties on two hundred and thirty hectares of vineyards.
Vinfication: Nazih Chamas, our cellar master, has been responsible for the vineyard from the beginning. He watches jealously over the vinification process, and thanks to a rigorous quality policy: limitation of the yield, harvesting at optimum maturity, and long maceration periods which allow the extraction of the best tannins, our wines regularly win prizes at the various national and international show competitions. The prize list of CHATEAU CAZEAU is eloquent and bears witness to our dedication to quality.
Tasting Notes: Full and substantial distinguished with jammy notes and a fresh finale of almond paste. A mature wine, elegant and full of charm.
Food and Wine: will be the priveledged companion of red meats, poultry, game and cheese. It will also show itself to advantage with cold meat starters, prawns, certain fish dishes, grilled or in sauce, and with desserts like strawberries, cherries or raspberries. To taste the wine in the best conditions, bring it progressively up to serving temperature ( 16 to 18°C )
AOC Bordeaux Red Wine
Soil:Clay-limestone.
Selection: We select the grapes following grape variety, soil, and maturity.
Grape varieties: 80% Merlot, 20% Cabernet Sauvignon
Wine making method: Traditional ageing, fermentation of the Merlot at 33°C during 15 days, Cabernet Sauvignon at 30° Thermo-regulated vats are used for the fermentation. The wine is aged in stainless steel vats.
Wine tasting: Sight: ruby colour with orange hue
Nose: red fruits aromas ( cherry )
Taste: nice and fruity attack with a spicy taste.
Wine characteristics: An elegant Bordeaux wine with pleasant tannins.
AOC Bordeaux Superierur
Soil:Located in the village of Pusseguin, 8km of Saint Emilion. Vines are planted in a clayed soil with sand.
Selection: We select the grapes following grape variety, soil, and maturity.
Grape varieties: 70% Merlot, 15% Cabernet Sauvignon, 15% Cabernet Franc.
Wine making method: The grape gathering is made mechanically. The grapes are put in tunes to prepare the fermentation during 21 days at 33°C . Wine making is carried out with the utmost care, following the classical methods of the Bordeaux area. The wine is aged cement vats during 15 months.
Wine characteristics: Cooked meat, poultry and chesse go very well with this wine.
AOC Bordeaux Red Wine
Geographical situation: "Masion Noble" circa 1480 with an exceptional architecture, on the hillside of Dordogne river, facing SAINT EMILION. Located on top of the hillside, the southern slope of the vineyard has outstanding sun exposure. The wine sink deep into the clay limestone soil, which is so important for the wine's bonquet. L' HEYRISSON is powerful, elegant, deep coloured and has a wonderful fruity bouquet with oak flavour.
Grape varieties: 100% Merlot.

Nose: Delicate, intense, spicy with wild tints

Associated Dishes: This generic wine will be prefect with any red or white meats, roasted or sauce poultries, cooked chesses and fresh red fruit. Being served at about 16°C , it will fully show its qualities. The best is to open the bottles a few hours before the meal. It will thus be perfectly oxygenated and will have fully developed its bouquet.
